Craft brewer makes her mark
in male-dominated industry
Entrepreneurship runs in Courtney Servaes' family. For as long as
she can remember, her parents have run their own successful businesses, the Hair Loft in Atchison, Kansas, and the St. Joseph Stockyards in
Missouri. She knew long ago she wanted to follow in their footsteps.
"Growing up, I became very aware of the pros and cons of being your
own boss and owning your own business," Courtney, '09, said. "I think I
always knew I'd eventually open my own business, but I wasn't entirely
sure what that business would be or at what point in my life I would take
that leap."
Courtney took that leap in April along with her wife, Brandi, and
opened Servaes Brewing Co. at 10921 Johnson Drive in Shawnee, Kansas.
Courtney, who is originally from Atchison, started brewing her own
beer in 2012. She was inspired after tasting a friend's home-brewed clone
of Boulevard Brewing Co.'s Chocolate Ale.
"I remember thinking, 'This is fantastic,'" she said. "Before that, I had
no idea that you could brew your own beer and have it actually taste
great."
Courtney immediately joined the Lawrence Brewers Guild, a local
home-brew club, and has never looked back. She has brewed hundreds
of different beers, challenging herself to try new things, learn new styles
and explore new and inventive flavor profiles. She has had the opportunity to participate in a few scale-ups of her recipes at professional
breweries and has won many awards for her home brew.
In 2017, Courtney started seriously considering opening her own
brewery in the Kansas City area. She is well known in the local craft beer
community for her innovative approach to brewing. She has brewed
beers with whole pumpkin pies, entire boxes of red velvet cake mix,
chocolate chip cookies, and other unconventional ingredients. Servaes
Brewing Co. focuses on New England India pale ales, hazy and aggressively bitter beers; barrel-aged stouts, dark beers brewed with roasted
malts; and smoothie-style sours, tart beers made with a variety of fruits.
"We don't have a set number or style of beers available," Courtney
said. "Instead, we focus on brewing new and interesting beers every
chance we get. The goal is to always have something unique on tap, so
you never know what you're going to get."
The brewery business is a family affair. While Courtney does the
brewing, Brandi handles the front end of the business. Their 12-year-old
son, Aaron, is involved with brewing craft soda for the family-friendly
taproom. Some of Aaron's planned sodas include a butterscotch cream
soda-inspired by Harry Potter's butterbeer-fruit punch soda, smoked
pineapple soda, and ghost pepper root beer. The couple also has a 1-yearold son, Dylan.
"It's going to take my entire family to make the brewery work and
to make it thrive," Courtney said. "We all have a role to play. There's
something very empowering, albeit terrifying, about owning your own
business and being your own boss."
Courtney graduated from Baker in the winter of 2009 with a Bachelor of Science degree in mass media and minor in English. In 2014,
